It’s beautiful, tactile and, strangely for a frying pan, genuinely interactive — from the way the wooden handle feels as you cook, to the way it clicks on and off, to the way the pan itself looks sitting on a big trivet at the centre of the table.

The JIU Frying Pan is designed to work as both cookware and tableware. Its clean, plate-like form means food can be taken straight from the hob to the dining table, keeping it hotter while removing the need to transfer it to a separate serving dish. Remove the handle and what looked like a frying pan moments earlier becomes a beautifully simple serving dish.

Made in Osaka from 1.6mm carbon steel, it offers the high-heat performance and durability associated with traditional iron cookware. The removable natural wood handle can also be shared between the JIU Frying Pan and JIU Soup Pan, so you only need one — making the range considerably more compact to store, something particularly useful in the famously small kitchens of Tokyo.

This probably isn’t going to replace your main frying pan, and that isn’t really the point. It’s a beautiful addition to the kitchen: thoughtfully designed, incredibly satisfying to use and equally at home on the hob or at the centre of the table. One of those pieces of cookware that makes the simple act of cooking and serving food that little bit more enjoyable.

PLEASE NOTE: HANDLE SOLD SEPARATELY.

Seasoning, Care & Hob Compatibility

As with all carbon steel cookware, the surface of your Fujita Kinzoku pan will continue to develop as you cook with it. Through regular use, the pan will gradually build up its own natural non-stick layer, becoming better seasoned over time.

We recommend re-seasoning your pan whenever required, following our Carbon Steel Pans – Seasoning & Care Guide. Changes in colour are completely normal, and acidic ingredients can temporarily strip some of the seasoning. If this happens, the surface can simply be re-seasoned and built back up again.

Carbon steel should always be dried thoroughly after washing and should never be put in the dishwasher.

These pans are suitable for gas, electric and induction hobs. When cooking on induction, we recommend keeping to medium temperatures initially and building the heat gradually, they can get hot extremely quickly, and sudden changes in temperature can cause a pan to warp or buckle. It is also recommended to remove the handle when it is not needed during cooking.

For full instructions on using, seasoning and looking after your pan, see our Carbon Steel Pans – Seasoning & Care Guide.

About Fujita Kinzoku

Fujita Kinzoku is a family-run metalworking company based in Yao, Osaka, producing cookware and household goods since 1951. Now in its fourth generation, the company combines decades of metalworking experience with modern manufacturing, carrying out much of its production within its own small factory.

Best known for its iron cookware, Fujita Kinzoku focuses on practical, well-designed tools made for everyday use. Their approach brings together traditional manufacturing skills, thoughtful design and a willingness to rethink familiar kitchen equipment — creating cookware that is simple, functional and made to be used for years.

Whilst on a trip to Japan in winter 2026, we had the opportunity to visit the Fujita Kinzoku factory and see first-hand how their cookware is made. The operation really impressed us — spotlessly clean, beautifully organised and still using some of the same machinery that has been at the heart of their production for decades. It was a real treat to see these wonderful pans being made and to better understand the people, processes and craftsmanship behind them.

Specifications

Size / inner diameter: 20cm / 24cm

Outer diameter: 25.5cm / 30cm

Height: 4.2cm / 4.5cm

Inner depth: 3.6cm

Base diameter: 14.5cm / 18cm

Material: 1.6mm carbon steel

Weight: 750g / 1010g

Made in: Osaka, Japan

//cdn.shopify.com/s/files/1/0565/4970/3819/files/DC46EB17-188B-4726-ACB8-5A774841E5E9.jpg?v=1787406627
