Grip it towards the end during cooking and the connection remains secure; hold it closer to the pan and the sliding mechanism can be operated easily to release the handle.\u003c\/p\u003e\n\u003cp\u003eUsing one removable handle across the JIU range also means the pans can be stacked and stored without fixed handles taking up additional space. The operation really impressed us — spotlessly clean, beautifully organised and still using some of the same machinery that has been at the heart of their production for decades.
