      Pallarès is a family-run knife maker based in Solsona, a small town in Catalonia in northern Spain with a long tradition of blade making. Founded in 1917, the company remains one of the last surviving knife manufacturers in the region, producing simple, functional knives and tools using traditional methods that have changed very little over the years.

      Pallarès knives are known for their straightforward, workmanlike character. Many of the blades are made from classic carbon steel, which takes a very keen edge and is easy to maintain with a sharpening stone. The handles are typically shaped from natural materials such as boxwood, giving the knives a warm, tactile feel that improves with age and use.
