Stamped Tsuchime – Hammered Finish
Tsuchime means “hammered” in Japanese. The stamped tsuchime finish recreates the textured, dimpled surface of hand-hammered blades using a precise pressing technique. These shallow indentations help reduce drag and minimise food sticking during prep, while giving the knife a subtle, crafted appearance.

Steel Care

Knives are only available to persons over 18 years of age. Due to the nature of our business, all customers will be asked to verify their age at checkout and upon delivery.

We ship Tuesday to Saturday using Royal Mail Tracked 24.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.

The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.

Blade Shape - Ko Bunka

This "Ko" (meaning small or child) bunka is a shorter version of the bunka from this series, it has the same height at the heel but it's around 45mm shorter, making it a great option for those looking for a compact chef knife which still has pkenty of knuckle clerance.

A great choice for all manner of food prep jobs, from dicing meat to slicing veg and everything in between. The Bunka is particularly distinctive because of its pointed, kiritsuke tip, which not only looks great but is super practical for finer jobs, like slicing garlic.

Steel Type - SPG2 Stainless

Super high grade stainless knife steel with high toughness, high hardness and high corosion resistence, making for a knife which can be expected to hold it's edge well, have a good resistance to damage and be resistant to patina from contact with acids in food.

Care information

A knife like this performs so well becuse it's to thin, but that does mean it's more susceptible to damage, so with this in mind no twisting or riving the knife if it gets stuck in food, no cutting toward bone or cutting frozen food and absolutley no dishwashers!

HADO are a company we've been trying to forge a relationship with for years, but with knives as in-demand as theirs it's not been easy!

Only producing knives since 2019 HADO are a very much a new kid on the block, which we take to be a good thing. In a business so steeped in tradition it takes fresh eyes to try something different and break away from the pack.
