Chinese-Style Cleaver – Versatile, Balanced
A Chinese-style chopping cleaver fitted with a classic boxwood handle.
Unlike heavy butchery cleavers, this knife carries far less weight and is designed as a general-purpose kitchen tool. The broad blade is ideal for slicing boneless meats, chopping, dicing and mincing vegetables, and crushing garlic or ginger.
The tall profile also doubles as a spatula, making it easy to transfer ingredients from board to pan — a defining feature of Chinese-style prep.

Steel – Performance with Character
Available in carbon steel (where specified), offering strong sharpness potential and excellent cutting feel.
Carbon steel takes a particularly keen edge and sharpens beautifully on stones, but it does require attentive care.

A Note on Carbon Steel
Carbon steel rewards care with exceptional sharpness.
Wash and dry thoroughly after use. If light surface rust appears, a gentle rub with a dry scourer will usually remove it. Over time, a patina will develop — natural, protective and entirely part of the knife’s character.
And for many reasons — never put your knives in the dishwasher.
