Santoku – The Japanese All-Rounder
The santoku is Japan’s most popular all-purpose kitchen knife. Its name means “three virtues,” referring to its ability to handle meat, fish and vegetables with equal ease. With a shorter, taller profile than a Western chef’s knife, the santoku offers excellent control and versatility. The flatter edge excels at push-cutting and chopping, while the wide blade makes scooping and transferring ingredients easy.

–––

Nashiji – Pear-Skin Finish
Nashiji translates to “pear skin,” referring to the softly textured, mottled surface left on the blade. This finish helps reduce food sticking while giving the knife a refined, organic appearance.

Sakai Kikumori – Sakai Craftsmanship
Made in Sakai, Osaka, Sakai Kikumori represents over a century of Japanese knife-making tradition. Working closely with master blacksmiths and sharpeners, their knives are known for precise geometry, excellent balance and dependable performance.

440C Stainless Steel
440C is a high-carbon stainless steel offering strong edge retention and excellent corrosion resistance. Durable and low-maintenance, it’s well suited to everyday kitchen use without the extra care demands of carbon steel.
