The K1m is the paring (or office) knife within Windmühlenmesser’s K Series — compact, precise and designed for detailed work.
With its finely ground tip and slim profile, it excels at peeling, trimming, coring and intricate in-hand tasks. At just 33g, it feels light and responsive, favouring control over force.

K Series – Thin by Design
Inspired in part by Japanese double bevel geometry, the K Series focuses on performance through thinness.
Each blade is shaped using Windmühlenmesser’s traditional dry-fine grinding technique. This method produces an exceptionally thin edge and slight concavity through the blade face, improving food release and reducing cutting resistance.
The result is a Western knife that feels unusually light and precise on the board.

Robert Herder – Solingen Since 1872
Founded in 1872 in Solingen, Germany, Robert Herder remains family run to this day. Known for maintaining traditional grinding techniques, the company produces blades that stand apart from typical Western knives — thinner, lighter and more refined in cutting feel.

Steel Options – Stainless or Carbon
Available in stainless steel or classic carbon steel.
The carbon version (approx. 60 HRC) takes a particularly keen edge and sharpens beautifully on stones. The stainless option offers easier day-to-day maintenance while retaining excellent cutting ability.
Both are ground thin behind the edge (approx. 0.26mm), contributing to their clean, efficient performance.

Handle – Plumwood
Fitted with a plumwood handle — warm in tone, comfortable in hand and well suited to the knife’s lightweight build.

A Note on Carbon Steel
At Community Cutlery we have a soft spot for carbon steel. It takes a finer edge and sharpens with satisfying feedback — but it does ask for a little care in return.
Wash and dry thoroughly after use. If light surface rust appears, a gentle rub with a dry scourer will usually remove it easily. Over time, a patina will develop — natural, protective and entirely part of the knife’s story.
And for many reasons — never put your knives in the dishwasher.
