Sakai Kikumori - NDH Nakiri 165mm
The world of Japanese kitchen knives is a highly specialised one, with many food groups having a purposely designed knife to perfectly fulfil its role. The Nakiri, a double bevel vegetable knife, with its thin profile and almost straight cutting edge is tailor made for making straight consistent cuts on a chopping board. Unlike other knives which almost always have a greater degree of curve at the belly, the straight Nakiri really enables you to make light work of anything you throw in front of it, from thinly slicing red cabbage, to dicing carrot, to mincing garlic to breaking down large root veg, the Nakiri is your friend when it comes to vegetable prep!
With is stainless cladding and core steel made from AUS 10 (a top quality stainless steel with good sharpen-ability) the NDH is a great range for those looking to use handmade Japanese knives but prefer not to have the responsibility caring for carbon steel. As is typical of handmade Japanese knives it's ground to be thin behind the cutting edge, ensuring a smooth and easy cut.
In addition to providing aesthetic appeal the hammered (Tsuchime) Damascus cladding also provides greatly improved food release, particularly useful when slicing vegetables.
