Large Slicer / Chopper – Chinese Cleaver (225mm)
The CCK large slicer/chopper is a bigger, more powerful take on the classic Chinese cleaver. Designed to handle higher volumes and slightly tougher prep, it retains a relatively thin grind for clean slicing while offering extra weight and blade height for more demanding tasks. Ideal for vegetables, boneless meats, and larger ingredients.
Thin Ground with Added Weight – Versatile Performance
Despite its size, this knife maintains the thin geometry CCK is known for, allowing it to move efficiently through food. The added length and height provide more cutting power and board coverage, making it well-suited to batch prep and heavier workloads. It’s best thought of as a large, rectangular chef’s knife rather than a true bone chopper — not suitable for heavy butchery or cutting through bones.

Chan Chi Kee, based in Hong Kong, has built a global reputation for producing high-performance Chinese kitchen knives. Favoured by professional kitchens for their cutting ability and value, CCK knives are known for their no-frills approach — prioritising performance above all else.
Carbon Steel
Made from simple carbon steel, this cleaver takes a very keen edge and is easy to maintain. It offers excellent cutting feel and responsiveness, particularly well-suited to fast, repetitive prep work.
Carbon Steel Care
As a carbon steel blade, it will develop a natural patina and can rust if left wet. Wipe dry after use and avoid prolonged contact with moisture or acidic ingredients. Don’t leave it soaking or put it in the dishwasher.
Handle – Traditional Barrel Handle
Fitted with a simple wooden barrel-style handle, designed for comfort and practicality. It will benefit from occasional oiling or waxing, and can be lightly sanded if it picks up stains over time.

We ship Tuesday to Saturday using Royal Mail Tracked 24.
All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.
The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.
