An elegant Japanese slicing knife from the Hatsukokoro Hayabusa range, combining a VG10 stainless steel cutting core with a Damascus finish, hammered Tsuchime detailing and a distinctive Bubinga wood handle.

At 270mm, the Sujihiki is designed for long, clean cuts through boneless meat and fish, making it an excellent choice for carving roasts, slicing steaks and preparing delicate portions of fish.

Sujihiki – The Japanese Slicing Knife

The Sujihiki is a long, narrow Japanese slicing knife, designed to make smooth, precise cuts with minimal resistance. Its slender blade reduces contact with food, while the generous length allows larger ingredients to be sliced in a single, controlled motion.

Particularly well suited to carving cooked meats, portioning boneless proteins and slicing fish, the Sujihiki is an excellent addition to a kitchen where precision and presentation matter.

VG10 Stainless Steel

VG10 is a Japanese stainless steel known for its excellent balance of sharpness, edge retention and corrosion resistance. It takes a fine cutting edge and offers reliable performance without the additional maintenance associated with carbon steel.

Damascus & Tsuchime Finish

The blade features a layered Damascus finish, creating a distinctive flowing pattern across its surface. The upper section is finished with Tsuchime, a traditional hammered texture that adds character and helps reduce contact between food and the blade.

Together, these finishes give the knife a striking appearance without compromising its everyday practicality.

About Hatsukokoro

Hatsukokoro is a Japanese knife brand based in Amagasaki, Hyogo Prefecture. Rather than producing all of its knives in a single workshop, Hatsukokoro works with a network of skilled blacksmiths, sharpeners and manufacturers across Japan, bringing together a diverse collection of steels, finishes and blade styles.

Their range includes everything from accessible everyday knives to exceptional handcrafted pieces, with an emphasis on quality, performance and traditional Japanese craftsmanship.

Steel Care

VG10 is a stainless steel and relatively easy to maintain. Hand wash and dry the knife after use, avoid leaving it wet or soaking in the sink, and never put it in the dishwasher.

Avoid cutting through bones or frozen foods, and always use a suitable wooden or plastic chopping board to protect the fine cutting edge.

Mono Bubinga Wood Handle

Finished with a mono bubinga wood handle, bringing a warm, rich colour and distinctive natural grain to the knife. Bubinga is a dense hardwood valued for its durability and attractive appearance.

As a natural material, the colour and grain will vary slightly from knife to knife.
