Ohishi White #1 Suminagashi Gyuto Knife 180mm
The Ohishi White #1 Gyuto 180mm is a versatile Japanese chef's knife combining traditional carbon steel performance with a distinctive Suminagashi Damascus finish. Its compact 180mm blade offers excellent control for everyday preparation, while the White #1 cutting core provides exceptional sharpness and ease of sharpening. Finished with a traditional octagonal zelkova wood handle.
Knife Shape & Finish
The Gyuto is the Japanese equivalent of a Western chef's knife, designed for a wide range of kitchen tasks including slicing, chopping and dicing vegetables, meat and fish. At 180mm, this version offers the versatility of a full-sized chef's knife in a more compact, manageable format.
Suminagashi means 'floating ink' and refers to the flowing pattern created by layers of steel in the cladding. Often used as a term to describe a type of delicate Damascus steel, it gives the blade depth and movement, with each knife displaying its own unique pattern.
White #1 Steel
White #1, also known as Shirogami #1, is a traditional Japanese high-carbon steel prized for its purity and ability to take an exceptionally fine, keen edge. Its relatively simple composition makes it particularly responsive to sharpening, allowing the user to achieve outstanding sharpness on whetstones.
As a reactive carbon steel, White #1 requires more care than stainless alternatives but rewards that attention with excellent cutting performance.
Steel & Construction
The White #1 cutting core is surrounded by layers of reactive iron cladding, creating the distinctive Suminagashi Damascus pattern. The iron cladding provides support for the hard carbon steel core while contributing to the knife's traditional appearance.
Both the cutting edge and iron cladding are reactive and will gradually develop a natural patina through use.
About Ohishi
Based in Sanjo City, Niigata Prefecture, Ohishi is part of the wider Nakaya / Akifusa family of knives. The range offers a wide variety of blade shapes, steels and finishes, combining practical everyday performance with traditional Japanese craftsmanship.
We've had the pleasure of visiting Ohishi in Sanjo and are delighted to offer the range at Community Cutlery.
Steel Care
This knife is made from reactive carbon steel with iron cladding and requires careful maintenance. Always wash and dry thoroughly immediately after use, and avoid leaving the blade wet or in contact with acidic ingredients for extended periods.
Over time, the blade will develop a natural patina, which is entirely normal and helps protect the steel. Never put the knife in a dishwasher or use it to cut frozen foods, bones or other hard ingredients.
