The Kiritsuke Bunka combines the practical, all-purpose profile of a Bunka with a longer 205mm blade and distinctive angled tip. It’s a versatile shape for everyday prep, with plenty of length for larger ingredients while retaining a precise tip for finer work.

Knife Shape & Finish

At 205mm, this is a larger take on the Bunka shape, sitting closer to a Gyuto in overall length. The blade has a Nashiji finish, named after the slightly textured skin of a Japanese pear, giving the knife a simple, understated appearance.

The knife is finished with a traditional Japanese-style Keyaki handle. Keyaki, also known as Japanese zelkova, is a hardwood commonly used in Japan.

Steel & Construction

The blade uses SLD, a semi-stainless Japanese tool steel. SLD offers excellent edge retention and sits between traditional carbon and fully stainless steels when it comes to maintenance.

Steel Care

SLD is considered semi-stainless rather than completely stainless. It has good resistance to corrosion, but the blade should still be washed and dried thoroughly after use and shouldn't be left wet or sitting in contact with acidic foods.

Always hand wash and dry immediately after use. Never put a Japanese kitchen knife in the dishwasher and avoid cutting frozen foods, bones or other very hard ingredients.
