The removable walnut handle is a key part of the JIU system, allowing the same handle to be used across compatible JIU Frying Pans and Soup Pans. Attach it for cooking, then remove it when you’re ready to bring the pan to the table or put it away.

Made from walnut from Tendo City in Yamagata Prefecture, the handle has a smooth, comfortable shape and a built-in metal sliding mechanism that allows it to be attached and removed with your thumb.

The mechanism has been designed around the way the handle is naturally held. Grip it towards the end during cooking and the connection remains secure; hold it closer to the pan and the sliding mechanism can be operated easily to release the handle.

Using one removable handle across the JIU range also means the pans can be stacked and stored without fixed handles taking up additional space. Once the handle is removed, the simple shape of the cookware also makes much more sense when brought directly to the table.

Each handle is assembled by hand, so slight variations between individual pieces may occur.

Fujita Kinzoku is a family-run metalworking company based in Yao, Osaka, producing cookware and household goods since 1951. Now in its fourth generation, the company combines decades of metalworking experience with modern manufacturing, carrying out much of its production within its own small factory.

Best known for its iron cookware, Fujita Kinzoku focuses on practical, well-designed tools made for everyday use. Their approach brings together traditional manufacturing skills, thoughtful design and a willingness to rethink familiar kitchen equipment — creating cookware that is simple, functional and made to be used for years.

Whilst on a trip to Japan in winter 2026, we had the opportunity to visit the Fujita Kinzoku factory and see first-hand how their cookware is made. The operation really impressed us — spotlessly clean, beautifully organised and still using some of the same machinery that has been at the heart of their production for decades. It was a real treat to see these wonderful pans being made and to better understand the people, processes and craftsmanship behind them.
