A traditional Japanese kitchen tool designed for shaving katsuobushi (dried, fermented and smoked bonito) into delicate, paper-thin flakes. Known in Japan as a kezuriki, this wooden shaving box is an essential tool for anyone interested in preparing authentic Japanese dashi and exploring the depth of flavour found in Japanese cooking.

Freshly shaved katsuobushi has a wonderfully rich aroma and a delicate, savoury flavour that is difficult to replicate with pre-packaged flakes. It's a key ingredient in dashi, the umami-rich stock that forms the foundation of countless Japanese dishes, including miso soup, noodle broths and simmered vegetables. The flakes can also be used as a finishing garnish for dishes such as okonomiyaki, tofu and rice.

Design & Construction

The shaver features a traditional wooden body with a fixed shaving blade set into the top surface. A pull-out drawer beneath collects the freshly shaved bonito flakes, keeping them contained and ready to use.

The simple, practical design has remained largely unchanged for generations, reflecting the Japanese approach to making specialised tools that perform their intended task exceptionally well.

How to Use

Hold a block of dried katsuobushi firmly and carefully push it across the blade, following the direction of the wood grain of the fish. Thin, delicate shavings will fall into the drawer below, ready to be added to your cooking.

For the best flavour and aroma, shave only what you need immediately before use.

Care & Maintenance

Keep the wooden box clean and dry, removing any remaining flakes after use. Avoid soaking or putting it in the dishwasher. Wipe with a dry or lightly dampened cloth and allow to dry thoroughly.

The blade is extremely sharp and should be handled with care.
