Koutetsu Chromax K-Tip Petty Knife 135mm Rosewood


Introduction

The Koutetsu Chromax K-Tip Petty 135mm is a compact, highly precise knife designed for the detailed work that larger knives can make awkward. The distinctive K-tip provides excellent control for trimming, peeling, in-hand work and other intricate kitchen tasks, while the thin blade geometry gives it exceptional cutting performance, gliding effortlessly through ingredients. As with any knife ground this thin, a little extra care is advised around hard or dense ingredients to help prevent chipping.


Petty

A petty knife is a small, versatile utility knife designed for the tasks that sit between a paring knife and a larger chef's knife. Ideal for trimming, peeling, slicing smaller fruit and vegetables, preparing herbs and working with smaller cuts of meat, it is one of the most useful knives to have alongside a gyuto or santoku.

A 135mm petty offers a little extra reach than a smaller utility knife while remaining nimble and easy to control.


K-Tip (Kiritsuke-Style Tip)

This knife features a kiritsuke-style “K-tip”, giving it a more angular, aggressive point. It excels in precise tip work — fine slicing, scoring, and detail tasks — while maintaining the versatility of a petty knife. A subtle change in profile provides a finer, more precise tip without affecting general use — and it looks ace.


Maker

Koutetsu is one of the house brands of Takayuki Shibata, one of Japan's most respected knife sharpeners. Based in Fukuyama, Hiroshima Prefecture, Shibata is renowned for producing exceptionally thin grinds and precise blade geometry, creating knives that glide effortlessly through food with minimal resistance.


Chromax Steel – Semi-Stainless Performance

Chromax is a semi-stainless steel developed to bridge the gap between carbon and stainless. It takes a very keen edge and holds it well, with a toughness that suits daily use. It's more forgiving than many high-carbon steels, while still offering that crisp, responsive feel on the stones.

It's not fully stainless, so it may develop a light patina over time, but it's far less reactive than traditional carbon steels — a practical option for those who want performance without the full maintenance demands.


San Mai – Three-Layer Construction

Constructed using san mai, with a hard Chromax core steel clad in softer stainless steel. This structure protects the core, adds durability, and makes maintenance easier by reducing reactivity along the blade faces.

Care

Wash by hand with warm water and a mild detergent, then dry thoroughly after use. Never put the knife in a dishwasher or leave it soaking in water.

As this knife has a semi-stainless cutting edge, it should still be dried after use. Over time, the exposed edge may develop a light patina, which is a normal characteristic of Chromax steel.


Age Verification

Age is verified at checkout where required, and again by the courier on delivery where applicable. Someone over the age of 18 must be available to receive the parcel.

We ship Tuesday to Saturday using Royal Mail Tracked 24.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.

The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.
