Introduction

The Kotetsu Chromax Gyuto 240mm is a versatile Japanese chef's knife designed to handle almost every kitchen task. The 240mm blade offers extra cutting length for preparing larger ingredients, while the thin blade geometry and Chromax steel make it equally suited to everyday use in both home and professional kitchens.


Gyuto

The gyuto is the Japanese equivalent of a Western chef's knife and is the most versatile shape in the kitchen. It is designed to handle almost every everyday cutting task, from chopping vegetables and herbs to slicing meat and fish.

A 240mm gyuto offers additional cutting length and efficiency, making it a popular choice for keen home cooks and professional chefs who regularly prepare larger quantities of food.


K-Tip (Kiritsuke-Style Tip)

This knife features a kiritsuke-style “K-tip”, giving it a more angular, aggressive point. It excels in precise tip work — fine slicing, scoring, and detail tasks — while still maintaining the versatility of a standard gyuto. A subtle change in profile provides a finer, more precise tip without affecting general use — and it looks ace.


Kotetsu

Kotetsu is one of the house brands of Takayuki Shibata, one of Japan's most respected knife sharpeners. Based in Fukuyama, Hiroshima Prefecture, Shibata is renowned for producing exceptionally thin grinds and precise blade geometry, creating knives that glide effortlessly through food with minimal resistance.


Chromax Steel – Semi-Stainless Performance

Chromax is a semi-stainless steel developed to bridge the gap between carbon and stainless. It takes a very keen edge and holds it well, with a toughness that suits daily use. It's more forgiving than many high-carbon steels, while still offering that crisp, responsive feel on the stones.

It's not fully stainless, so it may develop a light patina over time, but it's far less reactive than traditional carbon steels — a practical option for those who want performance without the full maintenance demands.


San Mai – Three-Layer Construction

Constructed using san mai, with a hard Chromax core steel clad in softer stainless steel. This structure protects the core, adds durability, and makes maintenance easier by reducing reactivity along the blade faces.

Care

Wash by hand with warm water and a mild detergent, then dry thoroughly after use. Never put the knife in a dishwasher or leave it soaking in water.

As this knife has a semi-stainless cutting edge, it should still be dried after use. Over time, the exposed edge may develop a light patina, which is a normal characteristic of Chromax steel.


Age Verification

Age is verified at checkout where required, and again by the courier on delivery where applicable. Someone over the age of 18 must be available to receive the parcel.

We ship Tuesday to Saturday using Royal Mail Tracked 24.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.

The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.
