Santoku – The Japanese All-Rounder
The santoku is Japan’s most popular all-purpose kitchen knife. Its name means “three virtues,” referring to its ability to handle meat, fish, and vegetables with equal ease. With a shorter, taller profile than a Western chef’s knife, the santoku offers precision, control, and versatility in everyday cooking. Its flat edge excels at push-cutting and chopping, while the wide blade makes it easy to scoop and transfer ingredients.

Tsuchime – Hammered Finish

Tsuchime means “hammered” in Japanese. These shallow indentations help reduce drag and minimise food sticking during prep, while giving the knife a subtle, crafted appearance.

SG STRIX — High-Performance Stainless with Engineered Edge Stability

SG Strix is a modern Japanese powdered stainless steel designed to combine high hardness, fine carbide structure, and real-world durability.

Produced using powder metallurgy, SG Strix has a much finer and more evenly distributed carbide structure than conventional ingot steels. That translates to:

  • Cleaner sharpening response

  • Higher attainable hardness (typically 62–64 HRC depending on maker)

  • Strong edge retention without excessive brittleness

  • Excellent corrosion resistance

Where older stainless steels can feel “glassy” or difficult on the stones, SG Strix tends to take a refined, crisp edge with good feedback.

• Hand wash only — never use a dishwasher

• Use wooden or soft plastic chopping boards
• Store safely: block, rack or saya
• Sharpen with whetstones for best long-term results

We ship Tuesday to Saturday using Royal Mail Tracked 24.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.
