Introduction

The Masakage Yuki White #2 Petty 120mm is a compact utility knife designed for the smaller jobs that make up everyday food preparation. Combining a fine-grained White #2 carbon steel core with stainless steel cladding and Masakage's distinctive nashiji finish, it offers excellent cutting performance while remaining practical for daily use.


Petty

A petty knife is a small, versatile utility knife designed for the tasks that sit between a paring knife and a larger chef's knife. Ideal for trimming, peeling, slicing smaller fruit and vegetables, preparing herbs and working with smaller cuts of meat, it is one of the most useful knives to have alongside a gyuto or santoku.

A 120mm petty is particularly well suited to detailed preparation and in-hand work while remaining compact and easy to control.


Nashiji Finish

Nashiji means "pear skin" in Japanese, referring to the softly mottled texture across the surface of the blade. On the Masakage Yuki, the pale, irregular finish has an almost snow-like appearance — fitting, as yuki means "snow" in Japanese. The texture gives each knife a subtle handmade character while helping to reduce drag and food sticking during use.


Masakage Yuki – Yoshimi Kato

The Masakage Yuki range is forged by Yoshimi Kato in Echizen, Fukui — one of Japan's best-known knife-making regions. These knives combine a fine White #2 carbon steel cutting edge with practical stainless steel cladding and a distinctive nashiji finish. Light, precise and straightforward to sharpen, they are well suited to cooks who want the cutting performance of carbon steel without the maintenance of a fully reactive blade.


White #2 Carbon Steel

White #2 is a fine-grained Japanese carbon steel known for its ability to take an exceptionally keen edge. Its simple composition makes it responsive on sharpening stones and capable of a very clean, refined cutting edge. Hardened to approximately 62–63 HRC in the Yuki range, it offers excellent cutting performance while remaining relatively straightforward to sharpen.


Stainless Cladding – Care & Use

The White #2 carbon steel core is clad in softer stainless steel, leaving only the exposed cutting edge reactive during normal use. The cutting edge will gradually develop a patina, so the knife should be rinsed and dried promptly after use. Never leave it wet or place it in a dishwasher. Use a wooden or soft plastic chopping board to protect the fine edge, and avoid bones, frozen food and hard twisting cuts.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.

The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.

Care information

As we're working with carbon steel here we need to be mindful of it's reactivity, we can expect the blade to darken and patina with use, that's normal and to be treasured, it's like the knife developing it's own fingerprint. 

What we don't to see is rust, rust will develop if the knife has been left with any moisture on the surface, to avoid it just make sure it's washed and dried throughly before you sit down to eat. If you do see any rust spots develop they can be removed easliy with a rust eraser.

A knife like this performs so well becuse it's to thin, but that does mean it's more susceptible to damage, so with this in mind no twisting or riving the knife if it gets stuck in food, no cutting toward bone or cutting frozen food and absolutley no dishwashers!
