Nakagawa Blue #1 Damascus Gyuto Knife 210mm

A tall, elegant gyuto from Satoshi Nakagawa, forged with a Blue #1 carbon steel core and iron Damascus cladding. The 210mm blade gives plenty of usable length for everyday prep, while the broad profile adds knuckle clearance and a confident feel on the board.

Blue #1 is a carbon steel known for taking a very fine edge. It is not stainless, so it will develop a patina with use and needs to be kept dry after washing. The iron Damascus cladding gives the blade a layered, low-contrast pattern across the face, adding texture and depth without feeling overly decorative.

Finished with an ebony handle, this is a refined gyuto with a substantial profile, clean geometry, and a classic carbon-steel feel.


Gyuto – The Japanese Chef’s Knife

The gyuto is the Japanese answer to the Western chef’s knife, designed as a true multipurpose blade. With a gently curved belly, pointed tip, and a thin, precise grind, it excels at slicing, chopping, and rocking through a wide variety of ingredients. Lightweight and thin compared to European styles, the gyuto combines speed, sharpness, and control, making it well suited to a wide range of everyday kitchen tasks.


Blue #1 Carbon Steel

Blue #1, also known as Aogami #1, is a high-carbon steel made for sharpness and edge retention. It can take a very fine edge and suits users who enjoy the feel and feedback of carbon steel. It is reactive, so it will form a natural patina over time and should be dried thoroughly after use.


Iron Damascus Cladding

Iron Damascus cladding gives the blade its layered pattern while supporting the hard carbon steel core. The iron outer layers are reactive, so they will darken and patina with use. Wipe the blade during prep, especially when cutting acidic ingredients, and dry thoroughly after washing to prevent rust.


Ebony Handle

Ebony is a dense, dark hardwood often used on higher-end Japanese knives. It gives the knife a clean, understated appearance and a solid feel in the hand, pairing well with the refined Damascus blade.

Care

This is a carbon steel knife with reactive iron cladding. It will develop a patina over time and can rust if left wet. Wash by hand only, dry thoroughly after use, and do not put it in the dishwasher. Avoid leaving it wet on the board or in the sink.
