Nakagawa Ginsan Tsuchime Petty Knife 150mm
Introduction
The Nakagawa Ginsan Tsuchime Petty 150mm is a versatile utility knife designed for the tasks that are too large for a paring knife but don't require a full-sized chef's knife. Combining Ginsan stainless steel with a traditional tsuchime finish, it offers excellent everyday cutting performance with the easy maintenance of stainless steel.
Petty
A petty knife is one of the most useful knives in the kitchen, sitting between a paring knife and a gyuto in size. It excels at preparing fruit and vegetables, trimming meat, slicing smaller ingredients and any task where a larger knife feels unnecessary.
At 150mm, it offers a little more reach and versatility than a smaller petty while remaining nimble and easy to control.
Tsuchime Finish
Tsuchime, meaning "hammered" in Japanese, is created by striking the blade during forging to leave a distinctive textured pattern. As well as giving every knife its own character, the shallow dimples can help reduce food sticking to the blade during use.
Satoshi Nakagawa
Satoshi Nakagawa is one of Sakai's most highly regarded blacksmiths. After apprenticing under legendary smith Kenichi Shiraki, he established Nakagawa Uchihamono and has earned a reputation for producing exceptionally well-forged blades with outstanding heat treatment. His work combines traditional craftsmanship with remarkable consistency, making his knives highly sought after by both professional chefs and enthusiasts.
Ginsan Stainless Steel
Ginsan (Silver 3) is a Japanese stainless steel that offers many of the sharpening characteristics of traditional carbon steel while providing the convenience of stainless. It takes a very fine edge, is straightforward to sharpen and offers excellent corrosion resistance, making it an ideal choice for everyday use.
