The Santoku is one of the most popular Japanese all-purpose knife shapes, designed to handle meat, fish and vegetables with ease. With a relatively flat cutting edge and compact profile, it works particularly well for chopping and push cutting.

At 180mm, this version gives you a little more blade length than the typical Santoku while remaining compact, balanced and easy to control.

Knife Shape & Finish

The blade features a Nashiji finish, named after the textured skin of a Japanese pear. The subtle, matte texture gives the knife a simple, understated appearance and helps reduce food sticking to the blade during prep.

The knife is finished with a Western-style Pakkawood handle. Pakkawood combines the appearance of natural wood with excellent stability and resistance to moisture, making it particularly well suited to an everyday kitchen knife.

Ohishi

Ohishi knives are produced in Sanjo, Niigata, one of Japan’s best-known centres for metalworking and knife production.

Their knives are designed with everyday use in mind, combining traditional Japanese knife-making with practical construction and materials.

Steel & Construction

The blade uses Ginsan, also known as Silver #3, a high-quality Japanese stainless steel. Ginsan is particularly popular because it offers many of the sharpening characteristics associated with traditional Japanese carbon steels while retaining excellent resistance to corrosion.

It takes a very fine edge, sharpens cleanly and is a great option for anyone looking for high-performance Japanese steel without the additional maintenance of a reactive carbon steel.

Steel Care

Ginsan is stainless and relatively low maintenance. We still recommend hand washing and drying the knife after use and never putting it in the dishwasher.

Use the knife on a wooden or rubber chopping board and avoid frozen foods, bones or other very hard ingredients that could damage the fine cutting edge.
