Sujihiki – The Precision Slicer
The sujihiki is Japan’s dedicated slicing knife, designed for clean, effortless cuts through meat and fish. Long, narrow, and fine at the tip, it reduces drag and preserves the texture of delicate ingredients. At 240mm, this sits in the sweet spot — long enough for single, fluid slicing strokes, while still feeling agile and controllable on the board.

Tsuchime – Hammered Finish
Tsuchime means “hammered” in Japanese. This finish features a patterned, dimpled surface along the blade, helping to reduce drag and minimise food sticking as you slice. On a sujihiki, this translates to smoother cuts through proteins, especially when working with larger portions.

Ohishi knives are produced in Sanjo, Niigata — a region known for practical, performance-focused blades. Stainless Steel – Care & Use
VG10 offers excellent corrosion resistance, making it low maintenance compared to carbon steel. That said, good habits still matter — rinse and dry after use, avoid prolonged contact with acidic foods, and never leave the knife wet. Use a wooden or soft plastic board to protect the edge, and hone or strop regularly to maintain performance.

We ship Tuesday to Saturday using Royal Mail Tracked 24.

All knives ship via an age verified service in accordance with The Offensive Weapons Act 2019, which will mean the postie will need you to be in to receive the delivery & to check your ID if you look under 25.

The law also requires us to carry out a soft age check of the purchaser after checkout, this is done by an automated system that usually doesn't require your input, although we will need to contact you for proof of age if you fail, which can sometimes happen if you use a work address.
