A thin, precise and seriously capable Santoku from Takamura, combining their excellent blade geometry with a Chromax core, stainless cladding and hammered Tsuchime finish.

Santoku – The Japanese All-Rounder

The santoku is Japan’s most popular all-purpose kitchen knife. Its name means “three virtues,” referring to its ability to handle meat, fish, and vegetables with equal ease. With a shorter, taller profile than a Western chef’s knife, the santoku offers precision, control, and versatility in everyday cooking. Its flat edge excels at push-cutting and chopping, while the wide blade makes it easy to scoop and transfer ingredients.

Takamura Hamono

Based in Takefu, Fukui Prefecture, Takamura Hamono is a family-run workshop with a reputation for producing exceptionally thin, high-performance kitchen knives. Their knives are particularly well known for their fine grinds, excellent cutting performance and precise fit and finish.

Chromax Steel

Chromax is a semi-stainless tool steel that combines many of the sharpening and edge-holding characteristics of carbon steel with improved corrosion resistance. Capable of taking a very fine edge and maintaining it through extended use, it offers excellent cutting performance while requiring less maintenance than traditional carbon steels.

Although more resistant to corrosion than carbon steel, Chromax is not fully stainless and should still be washed and dried thoroughly after use.

Tsuchime Finish

The blade features a traditional hammered Tsuchime finish, giving the knife its distinctive texture while helping to reduce the surface contact between the blade and food.

Steel Care

The stainless cladding is relatively low maintenance, but the exposed Chromax core at the cutting edge is reactive and can develop a patina with use.

Hand wash and dry thoroughly immediately after use. Never leave the knife wet, soaking in water or put it in the dishwasher. A patina developing along the exposed cutting edge is completely normal.
