The Santoku is one of Japan's most popular all-purpose kitchen knife shapes, designed to handle vegetables, meat and fish with equal ease. Its relatively flat cutting edge makes it particularly well suited to chopping and push cutting, while the compact profile offers excellent control during everyday food preparation.

At 165mm, this Tsunehisa Santoku is a versatile and manageable size, combining the cutting performance of traditional Japanese carbon steel with the practicality of stainless cladding.

Knife Shape & Finish

The blade features a Tsuchime Kumo finish, combining a hammered texture with a distinctive cloud-inspired pattern. Kumo is the Japanese word for cloud, reflected in the characterful appearance of the blade.

The knife is finished with a traditional Japanese-style handle featuring buffalo horn. The natural material adds a subtle contrast to the textured blade.

About Tsunehisa

Tsunehisa produces reliable, well-priced Japanese kitchen knives designed for consistent, everyday performance. Their blades combine modern steels with practical grinds and straightforward finishes, making them a popular choice among home cooks and professionals who want quality without pretence.

Steel & Construction

The cutting core is made from White #1, a traditional Japanese high-carbon steel prized for its purity and ability to take an exceptionally fine cutting edge.

White #1 has a high carbon content and very few additional alloying elements. This relatively simple composition allows it to achieve high hardness and take a highly refined edge, while remaining particularly responsive to sharpening on whetstones.

The carbon steel core is clad in stainless steel, leaving the exposed cutting edge reactive. This construction offers the cutting characteristics of White #1 with considerably less maintenance than a fully reactive carbon steel blade.

Steel Care

The stainless cladding is relatively low maintenance, but the exposed White #1 cutting edge is reactive and will naturally develop a patina with use. It can also rust if left wet or dirty.

Always hand wash and dry the knife immediately after use, particularly after cutting acidic ingredients. Never put a Japanese kitchen knife in the dishwasher and avoid cutting frozen foods, bones or other very hard ingredients that could damage the fine cutting edge.
