A traditional Japanese suribachi mortar paired with a magnolia-wood surikogi pestle, forming a particularly effective tool for grinding, crushing and mixing ingredients.

The ceramic mortar is made in Japan by Yamatada, a specialist producer based in Tajimi in Gifu Prefecture, an area renowned for Mino ware ceramics. Its interior is covered with Yamatada’s distinctive wave-like ridges, which catch and break down ingredients more efficiently than the smooth surface of a conventional mortar.

It is particularly good for grinding sesame seeds, spices and nuts, making dressings and pastes, or mashing tofu and vegetables. The broad, shallow shape also leaves plenty of room for mixing ingredients together and is attractive enough to use as a serving bowl once the preparation is complete.

The accompanying surikogi is made in Japan from magnolia wood. Wood is traditionally used for a surikogi because it is firm enough to grind effectively without causing unnecessary wear to the ceramic ridges.
